      Source

      Fish flown from Toyosu twice a week, and line-caught from the Pacific coast in between.

    2. 熟成

      Rest

      Wrapped, chilled and aged for days so the flavour deepens and the texture relaxes.

    3. 切る

      Cut

      One pull of the yanagiba per slice. A cut should never saw.

    4. 握る

      Press

      Body-temperature rice, pressed just enough to hold until it reaches you.

    Pickup Tuesday to Saturday, 3:00 – 5:00 p.m. Boxes are packed minutes before you arrive, so please collect on time.
